Carrot Kheer + Pazha Payasam

Ingredients:
10 medium sized carrots
Sugar as needed
Milk as needed
1 can Mixed fruit
Little Ghee
1 handful of almond soaked and peeled
2 tsp of cardamom powder

Method:
Peel the carrots and cut it into pieces. It can be bigger cubes as well. Pour a little ghee and sauté the carrots in it and then add water until the carrots are covered and pressure cook the carrots for 2 to 3 whistles. Once it cools down, add milk to it and grind it in the blender to a paste with the peeled almonds. Add a little ghee to a pan and pour this blended puree and add sugar and milk depending upon your needs. Bring it to a boil and then add powdered cardamom to it and let it cool it down. Add the fruits also to it at the end. You can serve it hot as well as keep in the fridge and serve it cold.


Modification, you can add condensed milk instead of sugar to give richness.
